Strawberry Bread Pudding

Ingredients

  • 8 slices of White Bread
  • Strawberry compote for spreading
  • Butter for greasing and spreading
  • Sugar ½ cup
  • Eggs 4
  • Vanilla essence 1 teaspoon
  • Milk 2 cups
  • Icing sugar for dusting

Method

Preheat oven to 180 degrees celsius. Grease a large oval glass baking dish with some butter

Discard the edges of the bread slices

Spread some butter on 4 slices and some strawberry compote on the remaining slices. Cover each buttered slice with the remaining slices, strawberry side down

Cut each sandwich into 4 equal pieces

To prepare custard, combine sugar, eggs and vanilla essence in a bowl and whisk with an electric beater. Add milk gradually and whisk well

Place the baking dish on a baking tray. Place the tray in the preheated oven and bake for 40-50 minutes or till the custard is set. Remove from oven and cool

Dust with icing sugar and serve immediately
